Pork and apple sauce may be a classic combination, but four brand new cider-based pork recipes are sure to appeal to customers looking for tasty dishes this spring.
Developed by the British Pig Executive (BPEX) in conjunction with The National Association of Cider Makers, the recipes, which are available to download from www.porkforcaterers.com are:
·Pan Fried Fillet of Pork with Cider and Honey Glaze
·Pork, Liver and Cider Terrine served with Plum and Cider Chutney
·Slow Cooked Belly of Pork Tandori in Cider
·Crock Pot Sausages, Cider and Roasted Vegetables
BPEX foodservice trade manager, Tony Goodger, said: “When complemented by the light fruity flavours of cider, the flavours in pork come through really well. Pork cooked with cider is also a great alternative to cooking with beer or wine, and there are a variety of ciders to choose from - either dry and light or strong and sweet. You could even try out your own homemade brew!
“And for those customers looking for something a bit healthier on the menu, lean pork is ideal. Some cuts such as fully trimmed loin can contain less than 4% fat (of which 50% is unsaturated) pork is also a great source of protein, vitamins and minerals.
“For these recipes, plus lots more useful information on sourcing and serving quality pork, make sure you visit our new look website, www.porkforcaterers.com.”
